Asparagus with Yogurt & Mint Sauce
For a light summer dish there's nothing more delicious and light at the moment than seasonal asparagus. Steam it for a few minutes then pair it with this refreshing minty yogurt sauce. How do you like yours?

Ingredients:
- 450g asparagus, woody ends removed
- 2 garlic cloves, finely chopped
- 5 tbsp full-fat yogurt
- 2 tsp mint leaves, finely chopped
- 2 tbsp olive oil
- 1 tsp honey
- chilli flakes (optional)
- ½ lemon, juice
- salt and pepper to taste
1. Steam the asparagus for 3-5 minutes until just tender, then plunge into cold water to stop them cooking further, then drain and put aside.
2. Meanwhile prepare the sauce, in a small bowl mix together the yogurt, honey, garlic, mint, lemon juice and olive oil until you reach a smooth consistency. Season well and add the chilli flakes, if using. Cover and chill for at least ½ hour.
3. To serve, arrange the asparagus on plates and add a puddle of the sauce. Scatter over some extra mint, if liked
