Avocado and Green Pea Smash
Buttery smashed green peas call for rich creamy avocado in this brilliant and skinnier variation of your classic avocado on toast. Sprinkle some sunflower seeds on top and you have a quick and super healthy snack or light dinner. Perfectly served also on its own with raw veggies.
Serves: 4-6 as a dip
Prepare: 20 minutes
Cook: 5 minutes
Ingredients:
- 150g peas (fresh or frozen)
- 1 ripe avocado
- 2 tbsp fresh mint leaves, roughly chopped
- ½ lemon, juice, plus extra to season
- 1 garlic clove, crushed
1. Boil the peas in lightly salted water for 3-4 minutes then refresh under cool water and drain well. Transfer to the small bowl of a food processor. Scoop out the avocado flesh and add to the peas with the remaining ingredients.
2. Whizz until blended and almost smooth, stopping to scrape down the sides every now and then. Season and add a little more lemon juice, if needed.
3. Serve with a platter of toasted flatbreads and crunchy raw vegetables for dipping.
