Baked Egg Avocado
Baked eggs in avocado might be the most simple, fast and nutritious breakfast or light dinner. Why not give it a try next time you're craving this combo?

Ingredients:
- 2 large avocados
- 4 eggs
- 1 tsp dried chilli flakes
- 2 tbsp extra virgin olive oil
- a handful of mixed salad leaves
1 . Preheat the oven to 180°C
2 . Cut the avocados in half length way, discard the stones and remove some of the flesh with a spoon, just enough to fit a whole egg.
3 . Arrange the avocados in a baking tray making sure they stay in place to avoid the eggs overflowing. Brake one egg in each avocado half.
4 . Put the tray in the oven and bake for 15 minutes.
5 . Take the avocados out of the oven leave them to rest for a couple of minutes whilst you arrange the salad leaves on a big serving plate. Season with extra virgin olive oil, salt and chilli flakes and place the avocados on the salad bed. You can add a grinding of black pepper and a drizzle more oil, if liked.
Best served hot as a starter or light main.
