Blood Orange and Dark Chocolate Chip Muffins

A moist, light and delicious wholemeal muffin recipe made with blood orange zest and juice, dark chocolate chips and Greek yogurt. All these amazing ingredients come together in perfect harmony to create a melt-in-your mouth muffin that might become your favourite one. You will love the light subtle orange flavour with touches of chocolate suspended throughout the cake and the light nutty flavour given by the addition of rye flour. A healthy and nutritious muffin recipe that is gluten free and very low in sugar.

Ingredients:

  • 100g self-raising flour
  • 50g rye wholemeal flour
  • ½ tsp baking powder
  • 50g light brown soft cane sugar
  • pinch of sea salt
  • 50g dark chocolate chips, plus extra to sprinkle on top
  • 2 medium eggs, lightly beaten
  • 3 tbsp cold pressed sunflower oil
  • 1 tsp vanilla extract
  • 2 blood oranges zest, and juice of one
  • 2 tbsp Greek yogurt

Method:

1. Preheat the oven to 200°C, gas mark 6. Line a 6-hole muffin tin with paper cases. Sift together both types of flour and the baking powder into a large bowl, adding any bran left in the sieve. Stir in the sugar, dark chocolate chips and a pinch of salt.

2. Lightly beat the eggs in a large jug or bowl then beat in the oil, vanilla extract, orange juice and zest. Mix well and then add the Greek yogurt.

3. Make a well in the centre of the dry ingredients and pour in the beaten liquid ingredients. Stir gently until just combined, do not over-mix.

4. Spoon the mixture in the prepared muffin tin. Scatter with the extra chocolate chips over each muffin. Bake in the preheated oven for about 20-25 minutes until well risen, golden brown and firm to the touch.

5. Leave the muffins in the tin for 5 minutes then serve warm or transfer to a wire rack and leave to cool. Store in an air-tight container and consume within 2 days.

Optional: To give the muffins extra sweetness you can make an orange glazing. In a small bowl mix 2-3 tbsp sifted icing sugar with 1 tbsp orange juice. Mix well until the mixture thickens, adding more sugar if necessary. When the muffins are completely cool drizzle over the glazing. Enjoy!
