Chilled Avocado & Pea Soup

Bring sunny flavours to your dining table with this deliciously refreshing soup recipe. This cold soup is not only flavourful and ready in ten minutes flat, it's also the perfect light, healthy no-effort summer lunch.

Serves: 4

Prepare: 10 minutes

Ingredients:

  • 1 ripe avocado, roughly chopped
  • ½ cucumber, peeled and roughly chopped
  • 300g frozen garden peas
  • handful of dill, a few sprigs reserved to decorate
  • 15g mint, leaves picked, plus extra to decorate
  • 1 lemon, zest of all and juice of ½
  • 1 tbsp extra virgin olive oil
  • 1 tsp pure clear honey
  • large pinch of sweet smoked paprika, plus extra to serve

1. Put all ingredients in a high speed blender with 600ml cold water and blend until smooth. Season to taste and blend again until it reaches the consistency of double-cream - add more water, if needed. Divide between 4 bowls and scatter each with the reserved dill, extra mint leaves and a pinch of smoked paprika. Finish with ice cubes and a splash more olive oil, if liked. Serve immediately with crusty bread.
