Chilled Cantaloupe Soup

Stay cool this summer with this creamy, refreshing and so fruity Cantaloupe Soup with fragrant mint and lime juice. A lovely fresh dish that you could also serve up as a starter if you fancy something different, plus it's ready in no time. We added orange, lemon and lime juice to the fruit, giving it a healthy blast of acidity.

Serves: 4

Prepare: 5 minutes

Ingredients:

  • 6 cups chopped cantaloupe, about 1 melon
  • juice of two oranges
  • juice of a fresh lemon
  • juice of a fresh lime
  • 2 tablespoons honey (if needed)
  • pinch of salt
  • 1 sprig fresh mint
  1. Place all ingredients, except for the mint, in a large bowl and stir.
  2. Place half the mixture in a blender and puree until smooth. Pour soup into a pitcher, and repeat with remaining mixture.
  3. Taste and whisk in more honey or even lemon juice if desired. Chill the soup until ready to serve.
  4. Pour the chilled soup into 4-6 soup bowls. Garnish each with a sprinkle of shredded mint or if you prefer a grind of black pepper and serve.

Tip: The soup separates as it sits, so give it a stir before serving and get it ice, ice cold. And don't forget the mint or a grind of black pepper.
