Chilled Cantaloupe Soup

Stay cool this summer with this creamy, refreshing and so fruity Cantaloupe Soup with fragrant mint and lime juice. A lovely fresh dish that you could also serve up as a starter if you fancy something different, plus it's ready in no time. We added orange, lemon and lime juice to the fruit, giving it a healthy blast of acidity.
Serves: 4
Prepare: 5 minutes
Ingredients:
- 6 cups chopped cantaloupe, about 1 melon
- juice of two oranges
- juice of a fresh lemon
- juice of a fresh lime
- 2 tablespoons honey (if needed)
- pinch of salt
- 1 sprig fresh mint
- Place all ingredients, except for the mint, in a large bowl and stir.
- Place half the mixture in a blender and puree until smooth. Pour soup into a pitcher, and repeat with remaining mixture.
- Taste and whisk in more honey or even lemon juice if desired. Chill the soup until ready to serve.
- Pour the chilled soup into 4-6 soup bowls. Garnish each with a sprinkle of shredded mint or if you prefer a grind of black pepper and serve.
Tip: The soup separates as it sits, so give it a stir before serving and get it ice, ice cold. And don't forget the mint or a grind of black pepper.
