Chocolate & Cherry Brownies

These chocolate and cherry brownies sing of summer. They have a soft and squidgy crumb, followed by a ripe sweetness from the cherries, making this classic cake even more delicious by the addition of extra dark chocolate and ground coffee. Help yourself with a square or maybe two with your morning coffee, or serve warm with a scoop of ice cream for a decadent dessert.

Ingredients:

  • 125g unsalted butter
  • 150g dark chocolate
  • 100g dark brown soft sugar
  • 50g cocoa powder
  • 100g plain flour
  • 1 tsp baking powder
  • 2 tsp ground coffee
  • 3 free range eggs, beaten
  • 300g cherries, stoned and halved
  • pinch of salt

1. Preheat the oven to 180°C, gas mark 4 and line a 20cm square baking tin with baking parchment.

2. Gently melt the butter, dark chocolate and sugar together in a saucepan stirring until well mixed, then remove from the heat.

3. Add the cocoa powder, flour, baking powder, salt and coffee to the mixture, and combine well. Then gradually beat in the eggs. Once everything is incorporated add the cherries, reserving a few to put on top.

4. Pour the mixture in the prepared tin top with the remaining cherries, and bake for 20-25 minutes until set but still with a bit of give in the centre. Remove from the oven and leave in the tin to cool completely before lifting out and cutting into squares. Keep in the fridge for up to 4 days, if not eating straight away.
