Coffee and Walnut Brownies
Because sometimes you just need a brownie break! These chewy brownies are wonderfully rich and flavourful from the addition of ground coffee and walnuts to the batter. They are also flecked with chunks of walnuts which add a bit of texture contrast. These are definitely our favourites so far this season, as you've got that wintry mix of flavours in every bite. They're very easy to make, perfect with your afternoon cuppa or as a quick & chocolatey breakfast. Yummy! As with all our dessert recipes we used much less sugar than traditional recipes plus you have the healthy walnuts - the best guilt-free treat! Ingredients:
- 125g unsalted butter
- 100g dark chocolate
- 70g dark brown soft sugar
- 30g cocoa powder
- 100g plain flour
- 1 tsp baking powder
- 2 tsp ground coffee
- 3 free range eggs, beaten
- 70g walnuts, roughly chopped
- pinch of salt
1. Preheat the oven to 180°C, gas mark 4 and line a 20cm square baking tin with baking parchment.
2. Gently melt the butter, dark chocolate and sugar together in a saucepan stirring until well mixed, then remove from the heat and add the ground coffee. Put aside and leave to cool slightly.
3. Meanwhile, put the cocoa powder, flour, baking powder and salt into a small bowl and combine well. Next, beat the eggs and gradually pour them in the chocolate mixture, lastly stir in the flour mixture. Once everything is incorporated add the chopped walnuts, reserving half of them to put on top.
4. Pour the mixture in the prepared tin top with the remaining walnuts, and bake for 20-25 minutes until set but still with a bit of give in the centre. Remove from the oven and leave in the tin to cool completely before lifting out and cutting into squares. Keep in the fridge for up to 4 days, if not eating straight away.
