Decadent Chocolate Brownie Truffles
Craving a gooey brownie? Try sinking your teeth into one of these ultra-chocolatey truffles. A delicious and healthy no-bake snack made with wholesome ingredients, like dates and nuts, ready in 10 minutes using just 5 ingredients. These small cute bites will keep your blood sugar in check and your body happy in between meals. What's not to like?
Makes: 20 (2.5cm) truffles
Prepare: 10-15 minutes plus 1 hour chilling
Storage: Up to 3 days in an airtight container in the fridge or 1 month in the freezer.
Ingredients:
- 130g almonds (or you can use cashews, walnuts or pecans)
- 130-135g pitted Medjool dates
- 25g unsweetened cocoa powder or raw cacao powder
- 1 tsp pure vanilla extract
- pinch of sea salt
- cocoa powder/raw cacao powder and/or shredded coconut for dusting
1. Place the almonds in a food processor and pulse until crumbly, but still with a bit of texture. Add the dates, cocoa or cacao powder, sea salt and vanilla extract, and blend again..
2. With slightly wet hands, roll the mixture into 2.5cm (1-inch) balls. If the mixture is too sticky to handle, place in the freezer for about 15-20 minutes until firm enough to roll.
3. Lightly cover each truffle with your choice of dusting ingredient and place them on a baking sheet. Chill in the fridge for at least 1 hour before serving, if you can hold your temptation :-D
