Fig, Mozzarella and Bresaola Ham Salad

Enjoy this colourful Italian-inspired recipe with a good slice of toasted bread for a simple yet sophisticated dinner idea.
Serves: 3
Prepare: 15 minutes
Ingredients:
- 250-300g mozzarella, thorn or sliced
- 20g parmigiano reggiano, shaves
- 100g baby spinach
- 8 figs, washed and quartered
- 100g bresaola ham, finely sliced
- 2 tbsp extra virgin olive oil
- 1 tbsp aged balsamic vinegar
- salt and pepper to taste
1. On a serving plate arrange the spinach leaves, mozzarella slices, figs and bresaola ham slices on top.
2. Drizzle over the olive oil and balsamic vinegar and top with shavings of parmigiano reggiano. Season to taste and serve immediately.
Tip: Make a meat-free version of this salad by swapping the bresaola ham for chargrilled tomatoes or chargrilled artichokes.
