Fruit, Nut & Chocolate Granola

Elevate your breakfast to the next level with this fruit & nut granola, it is delicious served with yogurt, compote or fresh fruit. Perfect not just for a crunchy breakfast, but also a quick snack or sprinkled on top of hearty crumbles.

Prepare: 10 minutes

Cook: 30-40 minutes

Ingredients:

  • 100g mixed nuts (walnuts, almonds), chopped
  • 250g rolled jumbo oats
  • 50g mixed seeds (pumpkin, sunflower)
  • 6tbsp coconut oil, melted
  • 2 tbsp clear honey
  • 50g goji berries
  • 50g sultanas
  • 50-100g dark chocolate, roughly chopped
  • 1tsp vanilla extract
  • ¼ tsp sea salt flakes

1. Preheat the oven to 170°C, gas mark 3. Line a large baking tray with parchment paper.

2. In a large bowl, mix together the nuts, oats and seeds. In a small jug mix together 3 tbsp water with the oil, honey and vanilla extract. Pour over the oat mixture and stir together well.

3. Tip the mixture into the prepared tray and spread out into an even layer. Bake for 20-30 minutes, stirring from time to time until golden (it will become crunchy as it cools).

4. Stir in the berries, sultanas and chocolate then leave to cool completely. Divide between bowls and add yogurt or fruit compote over each serving.

Tip: Any leftover granola can be stored in an airtight container for up to 2 weeks.
