Green Bean Salad with Feta, Dill and Almonds
Delicious and nutritious green bean salad enriched with salty feta, crispy lettuce ribons, toasted almond flakes and a stunning vinaigrette. This is a simple yet tasty side dish or brilliantly served on its own as a light vegetarian meal paired with toasted sourdough bread or baked potatoes.

Ingredients:
- 200g green beans, topped but not tailed
- 1 tbsp apple cider vinegar
- 2 tbsp extra virgin olive oil
- 1 tsp Dijon mustard
- 1 tsp clear honey
- 1 little gem or sweet cos lettuce, cut into ribbons
- 50g feta cheese
- 1 tbsp dill, leaves only
- 20g almond flakes, dry toasted
1. Bring a pan of water to the boil and add the beans. Cook for 4-5 minutes, then drain. Cool under cold running water for 10 seconds. Drain, dry and put into a serving bowl.
2. Add the vinegar, olive oil, mustard and honey to a small bowl and season. Stir until well combined and tip over the beans. Mix gently.
3. Add the lettuce ribbons and toss well. Garnish with the feta, dill and toasted almond flakes. Serve immediately.
Tip: Use fine or round beans for this recipe. Trim the tops but leave the tails intact - no reason for waste.
