Grilled Pink Grapefruit with Homemade Granola

Grilled grapefruit will make a brilliant sweet addition to your granola & yogurt breakfast combo. It's rich in nutrients, antioxidants and fibre, making it one of the healthiest citrus fruits you can eat. Crunchy and flavourful homemade granola is a top class touch. A breakfast worth getting up for!

Cook: 10 minutes

Ingredients:

  • 150g Greek yogurt
  • 2 pink grapefruit
  • 1 lime, juice
  • 2 tsp clear honey or maple syrup
  • 150g homemade granola

1. Preheat the grill to high. Peel the grapefruit then slice into discs.

2. Place on a non-stick baking tray lined with baking parchment and drizzle with a little honey or maple syrup. Grill for 8-10 minutes until blistered and caramelised.

3. Put 2 spoon-full of Greek yogurt on dessert plates, sprinkle the granola and top with the grapefruit slices. Serve immediately with a squeeze of lime juice, if liked.
