Lemon Drop Energy Balls

Tasty, sweet, and tangy all rolled in one ball. One bite and you'll understand why this is one of our favourite flavour.

Yield: 20 (2.5cm) balls

Prepare: 10-15 minutes plus 1 hour chilling

Storage: Up to 3 days in an airtight container in the fridge or 1 month in the freezer.

Ingredients:

  • 170g almonds or cashews
  • 1 pack (135g) pitted Medjool dates
  • 35g unsweetened shredded coconut, plus extra for rolling
  • 1 tbsp maple syrup
  • 2 tbsp lemon juice
  • 1/2 tsp pure vanilla extract
  • ½ tsp sea salt
  • 1 tbsp grated lemon zest, plus extra for rolling

1. Place the nuts in a food processor and pulse until crumbly, but not completely smooth. Add the remaining ingredients, except the coconut and lemon zest. Process until the mixture is well combined. Add the coconut and lemon zest and pulse for about 30 seconds until all ingredients are incorporated - the mixture will be sticky. If the mixture is too sticky to handle, place in the freezer for about 15-20 minutes, until it is firm enough to roll.

2. Use a small spoon to scoop out with the mixture and roll into bite-sized morserls, shaping with wet hands.

3. Mix the extra shredded coconut and lemon zest together in a small bowl and use it to lightly cover each energy ball. Place them on a baking sheet and chill in the fridge for at least 1 hour before serving.
