Mint and Lemon Ice
This is the lightest, most refreshing end to a meal. It can be prepared in advance, too. Serve in cups or glasses. A fabulous dessert for a hot summer night.
Serves: 6
Prepare: 10 minutes, plus freezing
Ingredients:
- 2 limes, peeled and segmented
- 4 lemons, zest of 2 and juice of all
- 2 x 25g pack mint, leaves picked
- 120g caster sugar
1 . Using a food processor or stick blender, whizz all the ingredients together with 500 ml water, until you have a smooth, greenish water. Pour into a freeze proof container and freeze, breaking up with a fork every hour or so, until it has frozen fully into ice flecks - about 5-6 hours.
2 . Scoop into glasses and top with a few extra mint leaved and some berries, if liked.
Tip: If you prefer the alcoholic version you can add 100ml vodka to the mixture.
