New Potato Salad with Spiced Yogurt Dressing

An easy homemade potato salad recipe with thick yogurt and enriched with fresh herbs and pungent ginger. It's a super speedy dinner idea ready in a flash and full of exciting flavours. We love Jersey Royals for this particular salad when they are in season, but any small potato will work well. It's the perfect comforting side dish or best enjoyed as a light dinner on its own.

Serves: 4

Prepare: 10 minutes

Cooking: 20 minutes

Ingredients:

  • 500g new potatoes, scrubbed
  • 1 tsp sea salt

For the dressing:

  • 150g Greek yogurt
  • 1 garlic cloves, finely cut
  • fresh ginger, small knob, peeled and finely grated
  • 1 tbsp chopped coriander
  • 1 tbsp chopped mint leaves
  • ½ lime, juice
  • salt and pepper to taste
  • chilli flakes, optional

1. Wash the potatoes, halving any larger ones, and place in a medium saucepan. Cover with cold water. Bring to the boil and add the salt. Reduce the heat, cover and simmer over a low heat for 15-20 minutes, until tender.

2. To make the dressing combine everything in a small bowl and season to taste.

3. When the potatoes are cooked, drain, cool for 5 minutes and then mix with the dressing. Sprinkle over some chilli flakes, if liked.
