Peanut Butter & Coffee Energy Bites
A simply amazing flavour - if you don't try this peanut butter and coffee energy bites, you'll definitely be missing out. Whip up a batch at the beginning of the week and store in the fridge to have ready any time you need a healthy and tasty afternoon pick-me-up. And we all need it badly let's be honest!

Prepare: 15 minutes plus setting time
Storage: Up to 5 days in an sealed container in the fridge or 1 month in the freezer
Ingredients:
- 85g cashew nuts
- 50g almonds
- 150 pitted Medjool dates
- 1 tbsp raw cacao or cocoa powder
- 2 tbsp peanut butter
- 1 tbsp finely ground coffee
- 1 tbsp coconut butter
- 2 tbsp maple syrup (or honey)
- ½ tsp vanilla extract
- pinch of fine sea salt
- 10-15g shredded coconut for rolling
1. Place the nuts in a food processor and whizz until crumbly, but not completely smooth. Add the remaining ingredients and process until the mixture is well combined.
2. Use a small spoon to scoop out the mixture and roll into 1-inch morsels, using slightly wet hands (if need be) to form the medium sized balls.
3. Lightly cover each ball with shredded coconut and place on a baking sheet. Place in the fridge for at least 1 hour before serving. Enjoy!
