Plum Puff Tarts

These crisp and flaky plum puff pastry tarts taste as good as they look. These simple tarts are made in minutes and are the perfect way for children to help out in the kitchen. Choose from sweet and juicy plums or crunchy apple to top them up. They are delicious on their own or served with ice cream, if liked.

Makes: 14-16

Prepare: 15 minutes

Cook: 20 minutes

Ingredients:

  • 200g chilled puff pastry
  • 1 small egg, beaten
  • 7-8 ripe plums, halved and stoned
  • 1-2 tbsp clear honey
  • 2 tsp butter

1. Put a baking sheet in the oven and preheat to 220°C gas mark 7. Thinly roll out the pastry on a lightly floured surface. Stamp out 10cm diameter rounds, or cut out using a cup or mug as a guide.

2. Arrange the rounds on a second baking sheet. Brush each round with beaten egg and place a fruit half on top, cut side down. Using half the honey, drizzle a little over each piece of fruit, then dot with butter.

3. Put the second baking sheet on the heated baking sheet and bake for 20 minutes or until the fruit is soft and the pastry is puffed and golden. Drizzle the remaining honey over each piece of fruit to glaze and serve warm.

Variations: Try peeled, halved and cored apples or pears, halved and stoned apricots or thick rounds of banana. Slip a flat round of white marzipan under each fruit half before baking.
