Roasted Plums and Greek Yogurt Pudding

With their soft flesh and intensely sweet flavour plums are a fall must for everything from salads to puddings. Put alongside refreshing and creamy Greek yogurt they make the perfect midweek pudding.

Serves: 6

Prepare: 10 minutes

Cook: 30-40 minutes

Ingredients:

  • 2 orange, juice
  • 1 tsp cinnamon or 1 vanilla pod
  • 6-8 plums, halved or cut in four
  • 2 tbsp demerara sugar
  • 500 ml Greek yogurt

1 . Preheat the oven to 200°C, gas mark 6. Put the orange juice and 100 ml water in the base of a small roasting tin (you want the plums to fit snugly). If using a vanilla pod, scrape out the vanilla seeds and add to the liquid along with the pod. Arrange the plums, cut side up, on top, then scatter over the sugar and cinnamon.

2 . Roast for about 40 minutes (timings may vary depending on the ripeness of the plums) until just soft and yielding. Baste the plums in the juices every 10-15 minutes and add a splash more water if the juices dry out at any point.

3. When ready allow to cool for 5 minutes, then arrange layers of yogurt and plums in tumblers or dessert glasses. For added crunch, scatter over a handful of toasted flaked almonds.

Tip: Serve immediately or make up to 2 hours in advance, chilling until ready to serve.
