Roasted Potatoes with Black Olives and Feta

Great news! If you're looking for a jazzed up roasties inspiration search no more. We just love this Mediterranean inspired recipe which is light yet super tasty. Lovely golden crispy potatoes mixed with salty black olives and punchy feta cheese - to fall in love with. They are delicious enjoyed with grilled meat or with a crunchy salad for a light meal.

Cook: 40 minutes

Ingredients:

  • 750g baby potatoes (or Jersey Royals if in season)
  • 2 tbsp olive oil
  • ½ lemon, juice
  • 60g herby black olives
  • 80g feta cheese
  • 2-3 fresh rosemary sprigs
  • salt and pepper to taste

1. Preheat the oven to 220°C, gas mark 7. Bring a large pan of salted water to the boil. Put the potatoes in the pan and boil for 15 minutes, until almost cooked through; drain and leave to steam dry in the colander for a couple of minutes.

2. Transfer the potatoes onto a sheet of baking parchment in a roasting tin and carefully crush them, either with a fish slice or a potato masher. Toss with the oil, rosemary and lemon juice; season. Tear in the olives and roast for 20-25 minutes, until golden and crisp. Crumble over the feta and serve.
