Sausages with Sweet Potato Mash and Sprouting Broccoli

It is the perfect moment to spend time in the kitchen and try new seasonal recipes. Three main ingredients: pork sausages, sweet potatoes and purple broccoli, all cooked with love and passion and put together to create a simple yet joyful meal to share with your loved ones.

Prepare: 20 minutes

Cook: 30 minutes

Ingredients:

  • 4 large potatoes, peeled
  • 1 tsp sesame seeds
  • 40g unsalted butter
  • 2 tbsp soy sauce
  • 3 salad onions, finely sliced
  • 3 tbsp olive oil
  • 6 pork sausages
  • 200g purple broccoli

1. Roughly chop the sweet potatoes and put in a pan of salted water. Bring to boil, then reduce the heat and simmer for 20-25 minutes, until tender. Meanwhile, toast the sesame seeds in a dry pan until fragrant (1-2 minutes).

2. Heat 3 tbsp oil in a large frying pan over a medium heat and add the sausages. Fry for 5-7 minutes, stirring regularly, until golden. Reduce the heat, add a few tbsp of hot water and cook for another 10 minutes until the sausages are cooked through with no pink meat remaining in the middle. Put them aside and keep them warm.

3. Meanwhile, in a large saucepan, steam the purple broccoli for about 5 minutes, then drain, season and drizzle with olive oil. Next, drain the potatoes then return to the hot pan with the butter and soy sauce; mash until smooth. Taste and season if needed. Stir through ½ salad onions and scatter the rest over the top with the sesame seeds.

4. Serve the sausages with the sweet potato mash and the steamed broccoli.
