Whipped Ricotta with Berry Compote
Are you craving for a dessert that's healthy, delicious and ready in no time? This is the ultimate last minute dessert that's super healthy and bursting with flavour. You are free to adjust the amount of sugar according to your own preferences, plus you can use any berries you have on hand, either fresh or frozen.

Ingredients:
- 150g blackberries and/or blueberries
- 150g raspberries
- 30g caster sugar, plus 1 tbsp extra
- 250g ricotta
- 1 tsp vanilla extract
- 4 amaretti biscuits, crushed
- fresh mint or thyme leaves to serve (optional)
1. Half the blackberries and put in a bowl with the raspberries, blueberries, 1 tbsp sugar and 1 tbsp water. Stir well and leave to stand while preparing the ricotta.
2. Put the ricotta, vanilla and sugar in a food processor and blend until smooth and creamy. Alternatively, beat the ricotta mixture in a bowl (although the consistency won't be quite as smooth).
3. Divide the ricotta between 4 serving plates and spread with the back of a spoon. Pile the fruit on top and drizzle over the juices. Scatter with the crushed amaretti biscuits and decorate with a few fresh thyme or mint leaves, if liked. Serve immediately.
Variations: Try digestive biscuits instead of amaretti, if preferred.
